Ritz Cracker Stuffing Total Cost $9.74


1 box Ritz Crackers
2 medium onions, diced
2 tbsp. garlic, minced
6 stalks celery, diced
3 carrots, diced or 9 baby carrots, diced
1 package mushrooms, diced
2 eggs
1/8 cup olive oil
1/2 cup chicken broth
salt and pepper to taste

How to make:

1. Heat oil in a skillet. Add onions, celery, and carrots. Cook until onions are golden brown.
2. Add mushrooms, garlic and cook 2 more minutes covered.
3. In a separate bowl crush crackers. Add cooked veggies, salt, pepper, eggs and fold until mixture is combined. Mix in chicken broth.

Use as stuffing for turkey, chicken, pork chops, fish. You can also cook in a buttered pan in the oven at 350 for 40 minutes to use as a side dish with dinner.


Sweet Potato Soufflé $ 5.12


2 large sweet potatoes, peeled
¼ cup brown sugar
3 tbsp. butter
4 eggs beaten
¼ cup orange juice
¼ tsp. cinnamon

How to make:

Preheat oven to 350. Combine mashed sweet potatoes with all ingredients. Beat well with a mixer. Fold into buttered 2-quart baking dish. Bake for 45 to 50 minutes or until a knife that is inserted in the middle comes out clean. Top should be golden brown.
