Spinach & Swiss Quiche


1 refrigerated piecrust (15 oz. package)

5 eggs

3/4 cup milk

1/2 tsp. salt

1/4 tsp. black pepper

1/2 of a 10 oz. package of frozen spinach, thawed and squeezed dry

1 cup of shredded swiss cheese


1. Preheat oven to 375 F.  Fit piecrust in a 9 inch pie plate, crimping the edges.

2.  In a bowl, stir together eggs, milk, salt and pepper. 

3.  Spread the spinach into the bottom of the pie crust.  Pour egg mixtur evenly over the spinach, then sprinkle with cheese.

4.  Put quiche in oven and bake 15 minues.  Reduce heat to 325 F and continue to bake for 20 minutes, until the crust is puffed and browned.  If it is starting to brown a little to quickly cover with foil. 

5.  Let stand for 5 minutes before slicing and serving.
